Mushroom Crusted Quiche

 

Preheat oven to 350 degrees.

3 Tbsp butter

½ lb mushrooms, chopped

½ c saltine crackers, crushed

½ c green onions, chopped

 

1 ½ c Pepper Jack cheese, shredded

1 ½ c cottage cheese

5 eggs

1/4 tsp cayenne pepper

1/4 tsp paprika

 

In a frying pan over medium heat, melt butter. Add mushrooms and green onions and sautee until tender. Stir in cracker crumbs. Turn mixture into an oiled eight  inch  pie pan . Spread mixture evenly over bottom and sides of pan using a spatula, creating a 1/4 inch raised crust around edges of pie pan.

 

Sprinkle crust evenly with shredded cheese. In a food processor, whirl cottage cheese, eggs and cayenne pepper until smooth. Pour into crust and sprinkle with paprika.

 

Bake for 45-50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

 

Serves 10-12.
