Dry Mix:
2 1/3 Cups Flour
1 Cup Sugar
1/3 Cup Cocoa Powder
2 Tsp. Baking Powder
3/4 Tsp. Salt
1 Cup Chocolate Chips
Wet Mix:
1 1/3 Cups Milk
2 large eggs
¼ Cup Olive Oil
1 cup ricotta cheese
1 tsp. Vanilla
Instructions:
Preheat oven to 375 degrees.
In a large bowl, combine dry mix.
In a medium bowl combine wet mix until smooth.
Fold wet mixture into dry mixture until blended.
Scoop batter into muffin tins.
Bake 25 minutes or until pick inserted in center comes out clean.
Remove from pans and serve warm.
