Chocolate Fudge Brownie Cookies

These incredibly rich cookies can be prepared entirely in one saucepan. They're easy and delicious!

Preheat oven to 350 degrees.

2 c semi-sweet chocolate chips
3/4 c butter
3/4 c cocoa
1 1/4 c sugar
3 eggs, well beaten
2 tsp vanilla
1 3/4 c flour
1 tsp baking powder
1/4 tsp salt


In a medium sized saucepan over low heat, melt 1 cup chocolate chips and butter, stirring often with wire whisk. Add cocoa and continue to heat and stir until well-blended. Remove from heat and add sugar and whisk in until smooth. Add eggs and vanilla and stir well. Stir in flour, baking powder and salt and beat to a fudgey consistency. Cool completely. Stir in other cup of chocolate chips. Drop by large spoonfuls onto an ungreased cookie sheet. Bake in a 325 degree oven for 12 minutes, or until set. Do not over bake -- cookies will have a slightly shiny surface. Cool for one minutes on cookie sheet, then transfer to wire rack.


Makes 2 dozen cookies.
