Chocolate Chip Toasted Almond Cookies

 

Fast and easy to prepare, no fancy ingredients, instant satisfaction! Can be made cholesterol-free and vegan by substituting margarine for the butter. Too good to be true!

3/4 c butter or margarine, softened
1/3 c sugar
1 tsp vanilla extract
1/4 tsp almond extract

1 c flour
1 c semisweet chocolate chips
1 c slivered almonds, toasted

Preheat oven to 350 degrees.

Cream butter or margarine and sugar together in a medium bowl using an electric mixer set at medium speed. Add extracts and beat well. Add flour, chocolate chips and almonds and blend on low speed until just combined. Place by teaspoon full onto ungreased cookie sheet, 2 inches apart. Press with bottom of spoon.

Bake 15-17 minutes or until cookies begin to brown. Remove from oven and transfer to a flat, cool surface.

Makes 2 dozen cookies
